Smoked Salmon and Avocado Salad

Serves 2
Calories per serving: 290
4g fibre per serving

Ingredients
green salad leaves, such as rocket, lamb's lettuce, frisée, endive
1 medium ripe avocado
2 slices smoked salmon, cut into fine strips
2 tablespoons vinaigrette dressing

Method
1 Arrange a bed of salad leaves on 2 plates.
2 Cut the avocado in half and remove the stone. Peel off the skin and place a half on each plate. Slice the avocado longways and arrange round the plate.
3 Arrange the smoked salmon strips over the avocado. Drizzle with dressing and serve immediately.
