High Fibre Recipes

Poached Stuffed Peach

Serves 1
Calories per serving: 108
1.5g fibre per serving

Ingredients
1 ripe peach
Small piece of marzipan
Juice of 1 orange
½ glass sweet or dry sherry (optional)

Method
1 Preheat the oven to 190°C/375°F/Gas Mark 5.
2 Cut the peach in half and remove the stone.
3 Fill the centre with marzipan and press the two halves of the peach together.
4 Place the peach in a small ovenproof dish and pour over the orange juice, with the sherry if using.
5 Cover the dish with foil. Cook in the oven for about 30 minutes. Serve hot, with crème fraîche if liked.
4 Pour into a lightly greased pudding basin and bake in the oven for 45 minutes.
5 Either serve immediately, with a teaspoon of jam, or cool completely, pour into empty yogurt pots and refrigerate until needed. The pudding can then be microwaved if necessary.
