High Fibre Recipes

Home made lentil soup

Serves 4
6.8g fibre per serving

Ingredients
200g red lentils
200g carrots chopped
200g turnips, chopped
2 rashers smoked bacon (optional)
1 large onion, peeled chopped
Parsley and single cream to serve (optional)

Method
1. soak the lentils in enough water to cover, for 2 hours or overnight
2. In a large pan, put the bacon and onions using the bacon fat to cook the onions gently. If vegetarian, omit the bacon and cook the onion slowly in 28g butter until transparent but not browned.
3. Add the chopped vegetables and the soaked lentils and add enough water to cover generously.
4. Simmer, with the bacon, for one hour until the vegetables and lentils are cooked thoroughly.
5. Discard the bacon, then process the soup in a blender or through a sieve, reserving a few chunks of vegetables if desired, to make a chunkier soup.
6. Adjust seasoning, adding salt and pepper as desired.
7. To serve, add a sprinkling of chopped parsley and a swirl of single cream.
