High Fibre Recipes

Home-made date and walnut flapjack

3.4g fibre per serving

Ingredients
500g oats
200g Olive oil spread
whole jar runny honey
2 teacup chopped dates
2 teacup broken walnuts
2 tsp cinnamon

Method
1. Heat the oven to 180C Gas Mark 4
2. Put the honey, Olive oil spread, dates and walnuts in a pan, and heat slowly until everything is melted and runny.
3. Stir in the oats and cinnamon and mix thoroughly to bind.
4. Press the mixture into a well-oiled baking tin or dish, making sure it is compacted.
5. bake in the centre of the oven for 20-30 minutes, or until the flapjacks are golden.
6. Take from the oven, and dipping a knife in cold water, cut the mixture into fingers immediately (dip the knife in water between cuts). This takes a bit of practice.
7. Leave on a window-ledge to cool completely, Remove the fingers and store in a tin.
