Baked Apple and Custard

Serves 1
Calories per serving: 130
4.7g fibre per serving

Ingredients
1 large baking apple
Handful raisins or sultanas or 1 teaspoon mincemeat
2 tablespoons low-fat custard

Method
1 Preheat the oven to 200°C/400°F/Gas Mark 6.
2 Remove the core from the apple, leaving the base.
3 Fill the centre with the dried fruit or mincemeat.
4 Place in a small dish and cover tightly with foil.
5 Bake in the oven for 20 minutes, or until soft, depending on the size of the apple.
6 Serve hot with custard.
