Bacon and Walnut Salad

Serves 4
Calories per serving: 204
4g fibre per serving

Ingredients
Selection of mixed salad leaves
Sprigs of fresh flat-leaf parsley (optional)
3 tablespoons walnut oil
1 tablespoon balsamic vinegar
1 clove garlic, skinned and crushed
Salt and freshly ground black pepper
100 g/4 oz lean, rindless bacon rashers, diced
50 g/2 oz walnut pieces

Method
1 Shred any large salad leaves into small pieces and mix with the parsley, if using, in a salad bowl.
2 Put the oil, vinegar, garlic, salt and pepper into a small bowl.
3 Fry the bacon in its own fat until golden-brown. Drain well, then sprinkle over the salad. Add the walnuts.
4 Whisk the dressing ingredients together until well blended, then pour over the salad.
Toss together and serve immediately.
